Honey Teriyaki Beef Skewers

Honey Teriyaki Beef Skewers 

Yield 2 servings:

10 pc            beef skewers

1 cup            pineapple, fine diced

    ½ pc                    jalapeño, fine diced, seeds removed

    ½ cup                 red pepper, seeds removed fine diced 

    ¼ cup                 cilantro, fresh, chopped 

    2 tbsp                olive oil 

    ¼ cup                 white onion, fine diced

    1 pc                     garlic clove, minced

    ½ pc                    Jalapeño, fine diced, seeds removed 

    2 port.               400g haiku pre-cooked steamed rice 

    3 pc                     Bok Choy, sliced, partial stem and core removed 

    1 tsp                   sesame oil (optional) 

    1 pack               140ml Honey Teriyaki Sauce 

    1 tsp                   white sesame seeds (optional)

     Toss pineapple, jalapeño, red pepper and cilantro with olive oil, season to taste 
     Sautée onion, garlic and jalapeño, stir in rice, fry rice until heated through, season to taste 
     Sautée bok choy, add sesame oil, season to taste 
     Season beef skewers with salt and pepper
     Sear beef skewers in a hot pan until desired doneness 
     Heat honey teriyaki sauce, coat beef skewers with sauce, garnish with sesame seeds 

    Bok choy has a lot of dirt, cut in half, wash well in a large bowl with cold running water, the dirt will sink to the bottom of the bowl, remove from water, pat dry and slice for your recipe
