Strozzapreti Con Pomodorini

This Strozzapreti con Pomodorini is a light artisanal pasta that comes with fresh summer flavours, melted bocconcini mozzarella and roasted grape tomatoes, topped with fresh oregano and Italian flat leaf parsley. 

Yield 1 portion 


1 ½ cups Strozzapreti Pasta, uncooked 

2pc Garlic Cloves, sliced thin 

½ pint Grape Cherry Tomatoes, cut in half

1 tsp Dried Oregano 

¼ cup Italian Flat Leaf Parsley, roughly chopped 

½ pint 100g Mini Bocconcini Mozzarella

TT Olive Oil 


  • Cook pasta in boiling salted water as per package cooking instructions

  • Heat olive oil, add garlic, cherry tomatoes and oregano, roast tomatoes until soft

  • Add cooked pasta into pan with roasted cherry tomatoes

  • Stir in bocconcini mozzarella into pasta until cheese starts to melt

  • Add fresh parsley, season to taste
