Asparagus & Prosciutto Toast

Asparagus & Prosciutto Toast 

poached egg, grilled pesto loaf, arugula  

Yield 2 portions


Ingredients 

¼ bch Asparagus, bottoms trimmed off 

2 pc Thick Sliced Bread

2 tbsp Pesto

2 pc Eggs, whole 

4 pc Sliced Prosciutto

½ cup baby arugula 

¼ cup white vinegar 

1 cup Balsamic vinegar, reduced by half for glaze (optional) 

TT Olive Oil 


Method

  • Blanch asparagus, toss with olive oil, season to taste 

  • Drizzle olive oil on both sides of bread slices, grill bread on both sides until golden brown  

  • Spread 1 tbsp of pesto on each toast, one side only, facing up

  • arrange toast with arugula, prosciutto and asparagus

  • Drizzle balsamic glaze over asparagus (optional) 

  • Set a small pot with 2 lt of water, bring to a boil, set at medium low heat 

  • Add ¼ cup of white vinegar to simmering water, season with salt  

  • Stir water gently; add cracked whole eggs one at a time while water is spinning

  • Poach eggs to desired doneness, serve on top of asparagus & prosciutto toast
